Microwave Air Fryer Combo

Troubleshooting

Microwave Air Fryer Not Crispy? What to Check

Soggy results in a microwave air fryer usually come from something you can check: the wrong mode, the wrong rack or pan, a crowded load, or wet food. The manuals agree on one layer and on turning food, but not on preheating. Check yours before you blame the appliance.

The short version

Check five things in order. Use Air Fry, not Convection or Combo. Use the exact accessory and position in your manual. Spread food in one layer with space between pieces. Dry the surface and skip wet batter. Turn food when prompted. Preheat only if your manual says so: Breville's Combi Wave does, Panasonic's NN-CD87 says no need.

These fixes come from the brands' own instructions. None promises a result, and we found no published measurement of how much each one helps.

What should I check, in order?

  1. Check the mode

Choose Air Fry, not Convection, Bake or a Combo mode. Good Housekeeping says air fry usually uses a larger, faster fan than convection. See convection versus air fry.
  2. Check the accessory and its position

Use only what your manual names for Air Fry. The table below shows how much this differs.
  3. Thin out the load

Spread food in one layer with space between pieces. Cook a second batch instead of piling it up.
  4. Dry the surface

Pat food dry. Use a dry coating instead of wet batter.
  5. Turn the food

Flip when the oven prompts you. If it doesn't, follow the chart in your manual.
  6. Check the preheat rule

Preheat only if your manual asks, and add the food as soon as the alert sounds.

What does each manual ask for?

ModelAir fry setupPreheat
Panasonic NN-CD87Basket on wire rack on enamel tray; keep the rack's spacer onNo need
GE GCST10A1Crispy pan on the tall rack, described as requiredNot listed
Breville BMO870Combi Crisp pan in the high position3 minutes with the pan inside
Ninja MW101, UK guideGlass basket with crisper plate, on the top railsNot stated
Whirlpool over-the-range help pageBasket centered on the turntable, not touching the wallNot mentioned

On load and turning: Panasonic asks for a single layer with space, stirring large amounts, and turning many foods at 2/3 of the time. GE flips when prompted. Breville says lay food flat in one layer. Ninja's UK guide says other accessories may give poor results. Find yours in the manuals. The Panasonic manual is for the NN-CD87, sister of the HomeChef.

Is the rack or pan in the wrong spot?

It's an easy miss. Ninja's UK guide says to air fry with the glass dish on the top rails, and lists that as the fix for unevenly cooked food. Breville asks for the high pan position. GE's air fry setup uses the tall rack only. If you lost a rack or pan, ask the brand for the right one before you improvise. See accessories.

Is there too much food?

Air fry needs hot air to reach the surface, which is why Panasonic asks for space between pieces. GE's presets show what a program expects: 8 oz of fries, 9 oz of onion rings, 14 oz of wings. Load far more and the preset's timing doesn't fit. Panasonic's chart does cover up to about 32 oz of thin frozen fries, with stirring at 2/3 of the time for anything over 16 oz.

Is the food too wet?

For homemade fries, Panasonic's chart says soak them in cold water in the fridge for an hour, dry them, then mix with oil. Whirlpool advises a dry coating instead of wet batter. We read that advice only as an excerpt. Whirlpool's help page says frozen fries and nuggets don't need thawing.

Do I really have to preheat?

Many tips say always. The manuals don't agree. Breville builds in a 3-minute preheat, and says to add food right after the alert. Panasonic says no need for Airfry and advises it for Convection instead.

What about smoke?

Built-up grease can cause smoke. The UK edition of Ninja's guide links it to splatter and food buildup in Air Fry. See grease, smoke and smells and how to clean.

When should I contact the company?

Contact the company or an authorized servicer if:

  • The fan doesn't run or the heater seems dead in Air Fry.
  • The display shows an error. The UK edition of Ninja's guide says to power off and call customer service.
  • The oven shuts off while cooking. Panasonic says a thermal safety device turns it off if blocked vents make it overheat.
  • The door, seal or hinges are damaged.

Never open the casing or repair it yourself. Only qualified service staff should repair a microwave.

Would a different appliance suit me better?

If you followed the manual and still aren't happy, and you care about crisp most, a basket fryer may suit you better. See combo versus basket air fryer. To replace the combo, see the best combos.

Quick questions

Why are my fries soggy in my microwave air fryer?

Usually a crowded load or the wrong setup. Panasonic's NN-CD87 manual asks for a single layer with space between pieces. GE's GCST10A1 manual says the crispy pan and tall rack are required, and its fries preset is built around 8 oz.

Do I need to preheat a microwave air fryer?

It depends on the model. Breville's BMO870 book runs a 3-minute preheat with the crisp pan inside, then asks you to add the food. Panasonic's NN-CD87 manual says no need to set a preheat for Airfry. Follow your own manual.

Can I use my own sheet pan to air fry in a combo?

Not on every model. The UK edition of Ninja's MW101 guide says the glass dish must be used for Air Fry. GE's manual requires its crispy pan on the tall rack. Some metal pans can also spark in microwave modes.

Should I use oil spray in a microwave air fryer?

Check your manual. The UK edition of Ninja's MW101 guide recommends canola, refined coconut, avocado, vegetable and rapeseed oils to limit smoke. It does not recommend olive oil, butter, margarine or cooking spray. Other models may differ.

Will a combo ever be as crisp as a basket air fryer?

Nobody can say from controlled data, because we found no head-to-head test. Good Housekeeping reports crisp, golden wings from its picks but publishes no scores and no basket comparison.
